In the video above, I share one of my favorite recipes while hunting for spring black bears. Nothing beats when you have a successful hunt after a couple of grueling days in the backcountry. Then, get back to camp to cook up a nice meal of bear nuggets cooked in rendered-down bear fat to restore your body of some much-needed fuel for the upcoming pack out.
It's literally the ultimate backcountry meal!

Harvest a black bear
Remove bear fat from the bear and place it into a separate game bag
Debone the bear meat and place the meat into a separate game bag
Cut bear meat into small, roughly half-inch squares
Take the fat and cut into small half-inch or slightly smaller squares
Toss bear fat into a cooking pot and place it on a wood-burning stove or on a backpacking-style stove
Stir and monitor the fat until you render down enough fat into bear oil
Add more fat as needed to get a good base of oil
As the bear fat cooks, you'll be left with some cracklings once the fat renders into oil. Don't overcook those or toss them away, as they are super tasty!
Next, toss in a handful of bear meat that was cut into small cubes
Stir the bear cubes every so often
You will want to cook the beat meat until it reaches an internal temperature of roughly 160 degrees. If cooking in the mountains, I just cook it for a while based on years of experience and feel. I'm cooking it until the meat gets a little charbroiled in a sense.
Take the black bear nuggets out of the oil and enjoy!
